Happy Cinco de Mayo! We used this day to have a little themed dinner which the kiddos seem to enjoy….and of course, we like it too! We even added a little decor to set the tone…
The bunting was a free printable from Cakes Like a Party, while the “Fiesta” print came from The 36th Avenue.
For dinner, we made Haystacks…a not-so-Mexican name for an easy Mexican entree. Everyone just piles all their own toppings on tortilla chips. So easy and delish. Mr. F whipped up some yummy pina coladas!
Oh, and we made some homemade guacamole.
Guacamole
4 Haas avocados, seeded and peeled (make sure they are at room temperature)
juice of 1-2 limes
1/2 tsp salt
1/2 tsp ground cumin
1/2 tsp cayenne
1/2 medium onion, diced
1 small tomato, seeded and diced
1 Tbsp chopped fresh cilantro
2 cloves garlic, minced
In a large bowl, place the scooped avocado and toss with the lime juice. Add the salt, cumin, and cayenne and mash with a potato masher. Fold in onions, tomato, cilantro and garlic. Serve with tortilla chips. DELISH!!
And what’s a festive fiesta without dessert??! We made two!! I whipped up some chili chocolate cupcakes and my own little culinary cupcake made a homemade flan. (For the cupcakes, just add about 1 1/2 tsp ancho chili pepper and 1/4 tsp cayenne pepper to devil’s food cake mix…I’m no baker so this was an easy recipe to follow! We topped them with some cream cheese icing. They were really good but weren’t spicy at all so if you want more of a kick, add more pepper.)
The cupcake toppers and the straw flags also came from The 36th Avenue.
I certainly don’t want to overwhelm you with all this goodness so we’ll save this amazing flan recipe for another day. Until then, Feliz Cinco de Mayo!!
